Event Information: Natural honey is mostly used as a food sweetener, but there is emerging evidence that it can be used to tackle the problem of antimicrobial resistance. This masterclass will cover the chemical composition, physical, chemical and antibacterial properties of natural honey. The masterclass will end with novel formulations involving natural honey with applications in the food, pharmaceutical and cosmetic industries.
